Savvy match: A sparkling Albariño is a perfect partner for this tyrosalata as it is light and refreshing with high acidity, too; once again, balance out this spicy, creamy dip. Albariño contains hints of lemon zest and citrus fruits and has a slight salinity, perfect for pairing with feta. This crisp white wine is further enhanced when made as a sparkling wine which acts as a palate cleanser which is why it works so well with spicier foods.

Tyrosalata is a traditional Greek whipped feta dip, usually served as part of a mezze platter. There are several regional variations to this versatile dish. My “not so” traditional take on this classic adds goat horn peppers for a bit of a spicy kick. The spice from the horn pepper is a significant factor in wine pairing, and a refreshing chilled sparkling white is the perfect way to offset that spice and tart feta. This stimulating yet straightforward blend of sharp feta paired with roasted peppers and mild spice is an excellent centerpiece for any crudité platter or game day coffee table. This dip will be your new party favorite, delicious with warm baked pita or fresh sliced carrot, cucumber, peppers, or tomatoes. 

Ingredients

  • ½ cup roasted peppers
  • ¼ cup goat horn peppers (such as Mama Lil’s)
  • 8 ounces feta cheese
  • 1 cup extra virgin olive oil
  • 1 teaspoon lemon juice
  • ¼ cup chopped parsley (optional)

Steps

1.

Begin with all the peppers in the bowl of a Cuisinart (food processor).

2.

Add the feta and pulse to combine.

3.

With the motor running, add the olive oil in a slow steady stream.

4.

Stir in the lemon juice and parsley.

5.

Adjust seasoning if necessary.

6.

Place the Tyrosalata in a bowl and serve with warmed pita bread.
