Watermelon feta salad with peaches, basil, and tomato

Chef, Lenny Redé
Wine Pairings:   Rosé Blend

Sauvignon Blanc

This watermelon feta salad combines fruity, sweet, and salty flavors you can enjoy with many California white wines

Savvy match : Summer is a time to relax, and this quick dish is one of our easy appetizers to pair with wine. Try a Sauvignon Blanc with its refreshing acidity and herbal notes to balance the feta and complement its pronounced saltiness.

This watermelon feta salad has become one of my most requested salads for a summer party. Simple, light, fresh, and delicious. Pair this with a light fresh California white wine — but also consider a rosé; it’s just about perfect. The fruity watermelon flavors of Rosé echo nicely and are balanced by the touch of feta and herbal fresh basil.

Ingredients

  • 2-3 cups seedless watermelon, rind removed, cut into 2” wedges
  • 2 cups heirloom tomatoes, cut into wedges
  • 2 cups ripe peaches or nectarines, cut into wedges

  • 1/4 cup fresh basil washed, leaves separated and left whole
  • 8 ounces of feta cheese, crumbled
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons balsamic vinegar
  • Sea salt and freshly ground black pepper to taste
